Chandelier Bar, Adelaide
Adelaide Casino has seen as massive $5 million redevelopment of Marble Hall, including an impressive custom-built chandelier weighing almost a tonne over hanging above the glamorous new Chandelier Bar.
Maeve Fox, Melbourne
Maeve Fox opened for trade in September last year taking over that space once held Platform 3. The venue is owned by Simon Pratt and Carlyle Gannon (behind South Yarra’s Katuk) as well as John Broderick and Leon Kopp.
The Saint, Sydney
Following a recent renovation The Saint is occupying the site that previously held the Paddington Arms Hotel. With its comfy chesterfields, cosy candlelight and friendly staff, The Saint claims to have settled in nicely and is already attracting a regular Paddington following.
Blanco Bar and Restaurant, Sydney

The Squire’s Bounty, Hobart
The Squire’s Bounty is the latest James Squire concept bar to open its doors and the first to make landfall in Tasmania. The venue opened mid-December 2009 and is located in iconic Salamanca Square with the aim in mind to provide Tasmanians with “premium craft beer and food matching experiences in a lively, convivial atmosphere.”
New Guernica, Melbourne
New Guernica is the newest and certainly one of the most unique nightspots to open in Melbourne. Occupying the space that only months ago held FFour, New Guernica is an eclectic mix of Hansel and Gretel meets Alice in Wonderland with just a sprinkling of Beowulf thrown in for good measure.
