Is it the End of ‘Bayz?

The Cocktail Bar at Bayswater Brasserie

The Bayswater Brasserie, a 28 year old Sydney institution and one of Australia’s most awarded cocktail bars, may be facing a difficult future after all the staff were given their marching orders on Monday.

Despite many of the staff being long serving (including one employee, affectionately known as ‘Sunny’, who has been there for over two decades) they were all provided with only four weeks notice.

Inside sources have informed 4bars.com.au that the venue will be closed for a brief renovation and re-launch - including the appointment of a new chef - after which staff may reapply for their roles.

Disgruntled employees have suggested that they will be unlikely to return following the re-launch.

Robert Smallbone, long time stake holder, will still be involved in the future of the venue, but industry rumors are abound that the venue may be facing larger changes than simply a ‘re-launch’.

One can only hope that, whatever direction the re-launched Bayswater Brasserie takes, the venue will remain a sanctuary for civilized drinking, dinning and adult fun so often absent from the whirlwind of Kings Cross venues.

Pop in to Bayswater Brasserie by Saturday 20 March to say goodbye to the current team and  “see you soon” to ‘Bayz as it closes for renovation.
